The 2016 Paloma Cabernet Sauvignon is 100% pure CS. It is fermented in French oak—33% new barrels —for 18 months before being bottled in the spring, then bottle-aged for an additional 30 months before release. 

"The Merlot is once again a blend of Estate Merlot and Estate Cabernet Sauvignon. The resulting wine is a big, world-class red wine capable of improving with bottle aging for 10 to 15 years. Complex aromas of black berry fruits, black stone fruits, chocolate, tobacco, spice and floral notes with a mineral overtone. On the palate the wine has a big silky mouth feel, well balanced, with flavors of berries, fruit, cocoa, cassis, and spice, and a long spicy finish. 94 points." - Brix26

The 2016 Paloma Cabernet Sauvignon displays a seductive nose of dark cherry, raspberries, anise and a touch of nutmeg.  In the mouth, the wine is silky smooth and very lush, soft on the entry and rewarding the taster with an impressively long finish.  Surprisingly approachable for a young Cabernet made from Spring Mountain fruit, the 2016 Paloma Cabernet will offer immediate gratification. Enjoy this beauty with a hearty meal of rich, creamy cheeses, wild game and a decadent chocolate dessert.

Paired with Lamb Osso Bucco last night - It was simply amazing. The richness was perfect with dinner and only got better as we sipped with our meal.
