2011 Cabernet Sauvignon
The 2011 Paloma Cabernet Sauvignon is 100% pure CS. It is fermented in French oak—33% new—for 18 months before being bottled in the spring, then bottle-aged for an additional 18 months before release.
A rough-and-tumble style, with muddled herb, damp earth, tobacco, and dried berry notes, reflective of the cool year. Ends with grainy tannins and crushed rock accents. While not a classic Paloma, this promises to surprise after a few years in the bottle. 400 cases made. — James Laube, Wine Spectator
