The 2011 Paloma Cabernet Sauvignon is 100% pure Cab Sauv. It is fermented in French oak—33% new—for 18 months before being bottled in the spring, then bottle-aged for an additional 18 months before release.
"A rough-and-tumble style, with muddled herb, damp earth, tobacco, and dried berry notes, reflective of the cool year. Ends with grainy tannins and crushed rock accents. A deep, intensely concentrated style packed with layers of opulence. The 2011 delivers a complex mix of zesty, vibrant wild berry, raspberry, currant and blackberry fruit in a firm seamless way. Full-bodied and gaining with every sip, this ends with complex mix of espresso and wild berry. Best from 2018 and 2025.
