2017 Cabernet Sauvignon
"Open and aromatic, with a plume of applewood, dried anise and sassafras notes leading the way for silky and fresh blackberry and boysenberry coulis flavors that carry through the fresh finish. Approachable now too. Drink now through 2032. 237 cases made." —James Molesworth, Wine Spectator
The 2017 Paloma Cabernet Sauvignon shares multiple layers of dark fruit, anise, and rich tones of cocoa. The alluring aromas are followed by a rich, silky mouthfeel with subtle notes of pomegranate. This beautiful expression of Spring Mountain fruit offers immediate enjoyment and promises continued pleasure. Enjoy this offering with a sumptuous meal of barbecue pork and crème brûlée for dessert.
The 2017 Paloma Cabernet Sauvignon is 100% pure Cabernet. It is fermented in French oak—33% new—for 18 months before being bottled in the spring, then bottle-aged for an additional 24 months before release. 252 cases of the 2017 Cabernet Sauvignon were produced.
